This too much technology for me, can I keep it simple and just number my exhibits automatically?

Yes, you can! Although you will not be able to avail yourself of all the great things the Citations Tool does, you can choose a simple exhibit numbering option.  Follow these steps:

(1) Open the Citations Tool side panel by clicking on "Citations Tool" in the ribbon;

(2) In the Exhibit Formatting section in the side panel, remove all blocks other than the "#" block by hovering over the blocks, clicking on the drop down arrow which will appear, and selecting "Remove this block";

(3) Unclick the "Use Id. to represent repeated citations";

(4) Draft the document as you usually with, or receive a draft with exhibit placeholders;

(5) Add citations using the steps above (we recommend still including a description for your reference or for the exhibit index);

(6) Insert cites in the document using the steps above;

(7) Only the exhibit number or letter will appear in the document.

I have no patience! Can this move faster?

If you don't have the patience for the app to refresh exhibits every time, you can unselect the "Update content automatically when new citation is added." This way, you can add placeholder citations only.  When you are ready, click the update citations button on the right side of the panel to update exhibit numbering and citations form.
